Abstract

Since the postwar years to now, the food consumptions have been oriented by succeeding transformations, the same it could be possible to see in the evolution of the elements - economical, political and technological - that determine the cultural identity of the Italian people. An Italian consumerist profile toward the food arises that this paper aims to analyze through the prevailing values. A sociological introduction on the meaning of the link between ethics and diet in the contemporary society of the search of safety/security and sustainability will lead to some new kinds of food consumptions, in particular to the functional foods and their cultural and economical potentiality.
